My mom’s banana chocolate chip muffins recipe (minus the chocolate).

A staple of my childhood, these muffins are easy to make, delicious, and so fab. 

Ingredients: 

  • 3-4 ripe bananas 
  • ½ (4 oz) cup apple sauce (vegan replacement for one egg
  • 1 tsp vanilla extract
  • 2 cups flour
  • ½ cup sugar
  • 1 tsp salt 
  • 1 tsp baking soda
  • ½ cup chocolate-chips 
  • Optional: walnuts/pecans 

Directions: 

  1. Put on a banger song. I put on “Shake It To the Max – Remix” by Moliy, Silent Addy, Skillibeng, and Shenseea.  
  2. Preheat the oven to 350˚. 
  3. Smash your bananas up in a bowl. Add in the apple sauce and vanilla extract. 
  4. Whisk your dry ingredients together in a separate bowl. 
  5. Add up the wet and dry ingredients and whisk away. 
  6. Prepare your muffin pan with cute pastel baking cups.
  7. Scoop up your batter into the muffin cups and put in the oven for 15-20 minutes. 
  8. Let rest for 10 minutes and munch!

Unfortunate events: All I had in my pantry was whole wheat flour, and I forgot to buy chocolate chips at the store… so these muffins turned out way healthier than I would’ve liked. I was thinking of adding pecans to make up for the chocolate-chip crunch, but then realized they were salted. Eventually, I decided to add some to the tops of my muffins for the aesthetic. 

Despite these insurmountable setbacks, my muffins turned out great. I hope you enjoy them!!
