An easy way to spice up your usual chocolate chip cookie.

I’ve been making these cookies since middle school, but only recently did I have the genius idea to add marshmallows to the mix. This iteration of these cookies is, dare I say, even better.

Ingredients:

  • ½ cup granulated sugar
  • ¾ cup brown sugar
  • 1 teaspoon salt
  • ½ cup unsalted butter (1 stick)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda or baking powder
  • ½ cup chocolate chips
  • Marshmallows

Directions:

  1. Melt the stick of butter completely.
  2. Dump the sugar, brown sugar, and salt into a bowl. Add in the melted butter and whisk everything together.
  3. Add in the egg and vanilla extract. Whisk until light ribbons fall off the whisk.
  4. Sift in the flour and baking soda/powder. Gently fold the mixture using a spatula.
  5. Add the chocolate chips and marshmallows. Fold them in.
    (Note: I used large marshmallows and ripped them into smaller chunks, but this resulted in a sticky mess. In attempting to flick a chunk off my finger, I sent marshmallow pieces flying into my kitchen ceiling. They might still be stuck up there…the moral of the story is, maybe use mini marshmallows instead!)
  6. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  7. Scoop the dough onto the parchment paper and press the balls of dough down to be flatter. (If you’re a true marshmallow lover, you can also insert a large marshmallow into the middle of the dough ball before pressing them down.)
  8. Bake for 12-15 minutes.

These cookies are chewy, chocolatey, marshmallowy, and delicious! I hope you enjoy them as much as I do!
