The perfect meal if you miss $12 pasta dinners at Fumo.
After a tough syllabus week, this meal feels like the perfect comfort food, a small reward for all the energy required to navigate those endless waitlists.
Ingredients:
- Splash of olive oil
- ½ an onion
- 1-2 cloves of garlic
- ½ – ⅔ cup of tomato paste
- A spoonful of red pepper flakes
- ½ cup of heavy cream
- ½ cup of pasta water
- ¾ box of penne
- Optional: ¼ cup of vodka
Instructions:
- Prep and boil a pot of water and cook the pasta according to the instructions on the package.
- Finely chop the onions and garlic.
- Grab a pan from the shelf and drizzle some olive oil, and let it warm up.
- Once the oil is heated, add the chopped onion and cook until translucent.
- After a few minutes of cooking the onion, add the garlic onto the pan.
- After 5-7 minutes, add the tomato paste and mix it well into the garlic and onion.
- Add some red pepper flakes and stir in some heavy cream.
- Once the pasta has come to a boil, grab some of the pasta water and add it into the sauce.
- Lastly, toss the pasta into the sauce and enjoy!!!
