Here’s a recipe that’ll hopefully satisfy your craving for Korean food!
Ingredients:
(Serves 5 people)
1 pack of short pork ribs
Kimchi, amount up to taste but at least 1 lb
1 large onion, sliced
4 green onions, sliced
1 anchovy broth tablet
Seasonings:
8 garlic cloves, minced
1 teaspoon peeled ginger, minced
1 tablespoon sesame oil
2 tablespoons soy sauce
1/4 cup maple syrup
2 tablespoons Korean hot pepper flakes
1/2 cup gochujang (Korean fermented pepper paste)
Steps:
1. Soak the ribs in cold water for 1 hour, then drain.
2. Bring a large pot of water to a boil, then add the ribs in for five minutes. Drain and rinse the ribs in cold water.
3. In a large bowl mix all the seasonings together and then add in the ribs. Mix by hand.
4. Place both types of onions and the broth tablet on the bottom of the pot. Add ribs on top of the onions.
5. Place the kimchi on top of the ribs. Then, add 5 cups of water for the soup.
6. Cover and let cook at medium heat for 1 hour until the meat is tender.
7. Season with salt and sugar to taste while it cooks
After you cook it, you can serve it with rice. You can mix it with the stew or have it in a separate bowl.
This was surprisingly easy to make! Hopefully everyone can try their hand at making kimchijigae while the weather is still a bit chilly. Hope you all enjoy it!
