Because you deserve more than crunchy dining hall rice…
After returning from a long winter break filled with home-cooked meals, I was quickly reminded of the sad reality of our school’s dining hall food. While the dining halls do occasionally serve up something decent (shoutout to Faculty House salmon), there are two items that are always severely lacking: fresh fruit (other than apples and bananas) and properly cooked rice.
With that being said, I wanted to share a quick, non-traditional mango sticky rice recipe that will not only satisfy your rice and fruit cravings but is also super easy to make in the microwave!
Ingredients
- A $1.99 mango that you spent an inordinate amount of time feeling up in Morton Williams to determine if it was ripe enough
- 1 cup of uncooked sticky rice/glutinous rice
- 1 can full-fat coconut milk
- ¼ cup sugar (approximately 12 stolen sugar packets from Pret)
- A heaping pinch of salt
- Water for cooking
Instructions
- WASH YOUR RICE. If you don’t wash your rice, you are gross.
- Soak your rice in a bowl of warm water for around an hour. In the meantime, you can catch up on work, take a quick nap, or mindlessly scroll through all of the drama on Sidechat.
- After an hour, drain your rice, leaving just enough water to cover the surface
- Place a plate over your bowl to create steam, and microwave it for 3 minutes. After 3 minutes are up, stir the rice, cover, and microwave it again for another 3 minutes. Then, microwave your rice in 30-second intervals until the rice is soft and sticky, but not mushy
- In another bowl or mug, mix together 1 ¼ cups of coconut milk, sugar, and salt, and microwave until hot (approximately 2 minutes)
- Slowly mix 1 cup of the coconut milk mixture into the hot rice. It will look really liquidy at first, but the rice will absorb all of that liquid. Save that extra ¼ cup of coconut milk mixture to serve with the rice.
- Lastly, slice your mango into thin slices. If you’re like me and don’t have a proper kitchen knife, you can attempt to cut the mango with a plastic butter knife.
- Arrange your rice and mango on a plate/bowl and enjoy!
