Asia and Bea are at it again…with bacon! This is probably delicious enough to make it worth leaving your room to buy the ingredients.
Bacon Fritatta
- 2 slices bacon
- 1 ear corn, kernels removed
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 4 eggs
- 1/2 cup shredded smoked gouda, or other cheese
Preheat oven to 350.
In an 8-inch, oven-proof iron skillet, fry the bacon until very crispy. Remove to paper-towel-lined plate to cool.
Pour most of the bacon grease out of the frying pan, but leave a small amount in the pan. Sauté the onion in the same frying pan until translucent and beginning to brown. Add the tomato, corn kernels, and chopped bacon.
Scramble the eggs, and pour them over the vegetables. Cook for 1-2 minutes on the stove, or until the edges are beginning to set.
Sprinkle the frittata with cheese, then put the whole pan into the oven. Bake for about 10 minutes, or until the egg has completely set. The egg should be solid through and the cheese should be starting to brown.

@The Helpful Vegan (CC '14) Great job!
But if you’re vegan, and like me, don’t want to add to the suffering of innocent animal life and the violence perpetuated by the dairy industry, you might want to try my version.
The Helpful Vegan’s Sandwich:

SO GOOD!
@The Helpful Sane Person It’s time to go.
@The Helpful Vegan (CC '14) What does that even mean? More importantly, it’s really disappointing that so many of my peers seem to think that living a cruelty-free lifestyle deserves a “thumbs down,” but it just goes to show how insensitivity is truly boundless.
@Bwog Critic 8/10: Nicely done. Simple, easy to follow. The perfect hangover programming. Maybe include cost and number of servings next time? But that’s a minor complaint. Also try and get some of your stuff from the green market! It would be a great way to make this feature a little more CU-centric.
@Zoe I see you were just kidding about the lobster…
@Anonymous I’m so glad to be friends with such cool kids! This looks absolutely delicious.
Keep up the great work, Bea and Asia!
@ML Oh my God! Just what I needed to see just about right now. So lovely to watch, and also can’t wait to try it out! Yum. Thank you Bea and Asia!
